Those coins let you buy new maps and gear in the shop. Some maps are way more brutal than others, with tighter drops and more obstacles packed in. Finding the ones that absolutely destroy your character is half the fun.
There are also mutators you can equip before a run, things like making your ragdoll heavier or bouncier, which completely changes how your character reacts. Messing around with different combos keeps runs feeling fresh instead of the same thing every time.
